New Bread baking course 9th April

After much demand I have picked a date for the next bread baking workshop.

Come along and perfect your bread making at home, a fun and interactive workshop.
Starting at 1030am with coffee and a chelsea bun then an introduction to the perfect dough.
Then its your turn to make bread followed by lunch. After lunch its question and answers while the bread rises, we should even have time for a quick scone making session or how to make perfect shortcrust pastry.
Then you get to take your bread home with you.

We are hiring

It is the time of the year to think about the busy spring and summer ahead, so with the addition of Divis to our tearooms we need more staff to help us at Rowallane.
As we are a very seasonal business this is a temporary job from April to September 20hrs+ a week to include working on weekends.
The main role is to serve the customers, make coffee's, help with kitchen prep, washing up and general duties. So a bit of everything.
We have many regular customers and it is important to treat everyone as a VIP. Having great fresh food is also another passion for us and that's why people come back.

So if you think this fits you send us your CV and we will get in touch.

Lemon Marmalade with honey

I made lemon marmalade today with lemons I was given by the lovely people at Walk Andalucia when I was on one of their great holidays at the end of January.
Lemons   1kg
Water       2.5 ltrs
Sugar      1.75 kg
Honey     200grms

I started by scrubbing the lemons in cold water then juicing them, leave the juice to one side. Now this is the most important separate the pith from the zest I cut the lemons into quarters and cut of the pith and set aside, next i sliced up the zest into fine strips. The next step is to put the pith into muslin and tie it up then I put the zest, lemon juice and water and muslin bag into a preserving pan and brought to the boil and simmered for just under 2 hours. Next I removed the muslin squeezing any remaining liquid in the bag back into remaining liquid now I added the sugar and honey to the pot and brought to a rolling boil until it reached the setting point before jarring. This made 9 275grm jars

Looking forward to Spring

As the days are getting a little longer I am looking forward to fresh herbs and veg from the garden this summer. I found this photo of the herb garden last year makes me think of menus for the summer.
